Ingredients

1kg Fresh Strawberries, washed, hulled, and halved if large.

1kg Tate & Lyle Fairtrade Jam Sugar

150ml Prosecco
Directions
Place the strawberries in a large saucepan over low heat. Simmer gently 5 minutes, stirring occasionally until softened.
Pour in the Prosecco and stir gently to combine.
Add the jam sugar and stir until completely dissolved.
Place a couple of small plates in the freezer to use for testing the jam’s setting point later.
Increase the heat to a rolling boil. Boil for 15-20 minutes, then test the setting point. Use a jam thermometer (105°C) or spoon a little jam onto a cold plate. If it wrinkles softly when pushed with a finger, it’s ready.
If the jam hasn’t set, return it to the heat and boil for another 2-3 minutes. Repeat the test with a fresh cold plate until the desired consistency is achieved.
Let the jam cool for 10 minutes in the saucepan. Skim off any foam, stir well, and pour into the warm sterilized jars.
Seal the jars with lids, label them, and store in a cool, dark place.
