1kg Raspberries (fresh or frozen)

1kg Tate & Lyle Fairtrade Jam Sugar

2tbsp Rosewater
Directions
- Place two small plates in your freezer. You'll use these later to test if your jam has set.
- Put the raspberries in a large, heavy-based saucepan. Let them simmer gently for about 5 minutes until they soften and release their juices. Stir occasionally to prevent them from sticking.
- Add the jam sugar to the pan. Keep stirring over a low heat until all the sugar has completely dissolved.
- Turn up the heat on your jam mixture and bring it to a steady, rolling boil.
- After about 10 minutes of boiling, it's time to test for a set. Take the pan off the heat. Spoon a small amount of jam onto one of the cold plates from the freezer and leave it for a minute. Gently push your finger through the jam; if it wrinkles, it’s ready! If not, return the pan to the heat, boil for another 2-3 minutes, and test again on the second cold plate.
- Once your jam has reached its setting point, remove it from the heat and let it stand for 10 minutes. This helps the fruit distribute evenly in the jars. Skim off any foam from the surface with a slotted spoon.
- Gently stir in the rosewater.
- Carefully pour the warm jam into your sterilised jars, seal them with lids, and add your labels. Store in a cool, dark place until you’re ready to enjoy.
