300g Whitworths Granulated Sugar

600ml Water

1 tbsp Boiling Water

190g Whitworths Caster Sugar

175g Unsalted Butter, at room temperature

175g Self-Raising Flour, sifted

50g Ground Almonds

2 Large Eggs, at room temperature

2 tsp Orange Extract

1 tbsp Milk
Directions
- Slice the oranges into 5mm thick rounds, removing any seeds.
- Combine the granulated sugar with 600ml of water in a large saucepan and bring to the boil.
- Stir until the sugar dissolves, then add the orange slices. Simmer gently for 20 minutes.
- Remove the orange slices from the saucepan and leave them to cool.
- Preheat your oven to 180°C (160°C fan). Lightly grease and line a 20cm (8-inch) round cake tin with greaseproof baking paper.
- Mix 1 tablespoon of the caster sugar with 1 tablespoon of boiling water until dissolved. Pour this into the base of the prepared tin.
- Arrange the cooled orange slices in a circular pattern at the bottom of the tin, overlapping them slightly to ensure no gaps are left. This prevents the cake batter from seeping through.
- Cream the remaining caster sugar with the butter for 2-3 minutes until light and fluffy.
- Add the eggs one at a time, mixing well after each addition, and fold in the ground almonds.
- Stir in the orange extract and milk until combined.
- Gently fold in the sifted self-raising flour until the batter is smooth.
- Carefully spoon the cake batter over the arranged orange slices, spreading it evenly while avoiding movement of the fruit.
- Bake for 35-40 minutes, or until golden brown and a cocktail stick inserted into the centre of the cake comes out clean.
- Allow the cake to cool in the tin for 10 minutes, then carefully turn it out onto a wire rack or plate, so the orange slices are on top.
- Leave to cool completely before slicing with a sharp serrated knife.
