These easy homemade meringue nests are light, crisp, and melt-in-your-mouth delicious. Made with just a few simple ingredients, they're perfect for topping with whipped cream, fruit, or curd for an elegant dessert. A classic recipe that's simpler than you think, ideal for special occasions.

Ingredients
4 Egg Whites
Pinch of Salt
Tate & Lyle Caster Sugar
1tsp Vanilla Extract
1tsp Cornflour
Single Cream or Crème Fraiche, to serve
Fruit, to serve
Directions
Preheat the oven to 130°C or 110°C Fan and line 2 baking trays with non-stick parchment paper.
Add the egg whites and salt to a large, clean, grease-free bowl and whisk until they hold their shape. Do not over whisk as this will cause the eggs to separate.
Add half the caster sugar, whisking well. Then add the vanilla extract, cornflour and remaining sugar until stiff, glossy peaks form.
Place 6 heaped mounds of the meringue onto each baking tray, spreading them out slightly, though allowing enough space between them.
Place in the oven and bake for 1.5 to 2 hours to dry out. Once done, switch off the oven and leave the meringues inside until completely cool. Once cool, carefully remove from the parchment paper.
Serve with fresh cream, raspberries and strawberries. Enjoy!
