Quick & Easy Blueberry Jam

Ingredients
- 800g Fresh Blueberries, washed
- 625g Whitworths Jam Sugar
- Juice of 1 Lemon
Directions
- Place a small plate in the freezer to use later for testing the jam.
- Add all the ingredients to a large saucepan over a medium heat.
- Stir continuously until the blueberries soften, then mash them gently with a potato masher.
- Once the sugar has completely dissolved, bring the mixture to a boil and cook for 5 minutes.
- Test the jam by placing a small spoonful onto the chilled plate. Leave it for 30 seconds, then gently press it with your fingertip; if it forms a skin and wrinkles, the jam is ready. If it doesn’t, boil for another 2 minutes and test again. Repeat as necessary, being careful not to over-boil it, as this can make the jam too thick.
- Remove the saucepan from the heat and skim off any foam or scum from the surface, discarding it.
- Allow the jam to rest for 5 minutes before spooning it into hot sterilised jars using a funnel.
- Place a wax disc on the surface of the jam in each jar, then seal with lids.
